Super Quick Stir Fry Recipe

Hello Everyone,

One of my favourite things to do is cook.  I find it therapeutic, especially after a long day.  I will follow recipes, but I tend to like to mix things up and try different ingredients for myself.  The recipe I want to share with you is a simple, quick stir-fry, which my other half and in-laws love.  You can pick and choose to add whichever meat, fish or tofu you like to add.

Ingredients

4 garlic cloves – crushed (I love garlic, but if you’re a vampire, feel free to reduce)
Thumb sized piece of ginger cut into small pieces
1 red chilli – deseeded and chopped
1 green chilli – deseeded and chopped
Toasted Sesame Oil
Fish Sauce
Soy Sauce
King Prawns (Raw) – its two packs for £6 in most supermarkets
Silken Tofu
Egg Noodles
Vegetables of your choice, buy a bag of stir fry veg if you don’t have a preference, it sometimes works out cheaper too, I usually add a couple of bags if I’m not using a selection.

Method

Add 2 tbsp. of toasted sesame oil to a wok then add the garlic, ginger and chilli’s.  Cook until softened, your kitchen should smell amazing right now.

Next, add the prawns, continuously stirring, until pink.

Add one tbsp. of fish sauce, and two tbsp. of soy sauce

Add your vegetables now, if you’ve bought a pack, cooking timings will be on the packaging so follow these, otherwise, I keep stirring until the vegetables begin to wilt.

Next add your noodles, once again follow the instructions on the pack, or stick to about 2mins.

I then added my silken tofu.

Taste the sauce to see if it is to your liking, only add extra soy sauce or fish sauce.  I tend to add a splash of both, but do whatever tastes good for you.

Serve and enjoy!

I’d usually have a nice chilled bottle of Rose but Andrew bought me a bottle of Rioja as I’ve not been feeling well.

Hope you’ve all had a lovely weekend so far.
